- 30 g aceite de coco
- 100 g harina de avena

- 1 pizca nuez moscada
- 25 g nueces
- Topping
- 250 g queso de untar
- 2 cditas sirope de Agave o azúcar de abedul
- 1 cda aceite de coco o mantequilla
- Unas gotitas de vainilla

- Pelamos y trituramos las zanahorias. Precalentamos el horno a 180ºC.
- En un bol, mezclamos los ingredientes húmedos: Los huevos, las claras, la pasta de dátil, el aceite de coco y la zanahoria.
- En otro bol mezclamos los ingredientes secos: las harinas tamizadas, la canela, la nuez moscada y la levadura.
- Mezclamos ingredientes secos y húmedos y añadimos las nueces.
- Vertemos en el molde y horneamos durante aprox. 30 minutos. Dejamos enfriar.
- Para el topping mezclamos todos los ingredientes.
- Abrimos el bizcocho por la mitad y untamos la mitad de la crema por dentro y la otra mitad por encima. Decoramos al gusto con zanahoria triturada, nueces y canela...
- Dejamos en la nevera un rato para que se asiente la crema y lista para disfrutar!
