- Haz la ganache derritiendo el chocolate, acto seguido bate todos los ingredientes e introducela en la nevera. Debe estar lo más fría posible para poder decorar la tarta.
- Pon las pasas a hidratar en agua templada.
- Separa las yemas y las claras, reservando las claras en un recipiente para posteriormente montarlas.
- Bate las yemas y añade la ralladura de naranja.
- Añade las pasas hidratadas, zanahoria, leche vegetal, zumo de naranja, aceite de coco y mezclamos.
- Tamiza las dos harinas y la levadura en un bowl aparte. A continuación incorpora esta mezcla en el bowl con la anterior mezcla.
- Bate las claras a punto de nieve y añadelas a la mezcla con movimientos envolventes, así conservan el aire.
- En un molde de 15cm, coloca papel vegetal para horno o simplemente engrásalo.
- Introdúcelo en el horno precalentado a 180ºC durante 30-40 minutos. (Ve controlando con la prueba del palillo)
